Pride Pre-Brunch



Today is Thursday already? Wow, this week has really flown by. So obviously, this week wasn't too bad. Aside from being glued to msnbc all week, fascinated with Occupy Wall St. and their movement, I have some great new recipes and a burst of creative juices!



Sunday brought a new week and a beautiful day. Bobby and I went out to Come Out with Pride Orlando, watched the parade and had some drinks. The best part of the day was when Bobby got to meet his favorite local journalist. It took him some coaxing to say hello, but he finally did so and I don't think he regrets it. That morning, we had a delicious brunch. Having not been to the grocery store recently, I just threw some things together and we both ended up pretty impressed.

Here's The Recipe:

-4 Hard Boiled Eggs
-Bunch of Asparagus
-Few Slices of Cheese (I used Cheddar)
-1 Cup of Low-Fat French Vanilla Yogurt
-3/4 Cup Grapes (Cut in Half)
-1/4 Cup Panko Bread Crumbs
-2 Tbsp Olive Oil
-Salt and Pepper

Preheat the oven to 350 degrees F.
Mix together your grapes and yogurt, set aside.
Trim the asparagus and place it in a roasting dish, drizzle with olive oil, season with salt and pepper. Top with breadcrumbs. Roast for 25 minutes.
Hard boil your eggs, let cool. Peel and cut into wedges.
When asparagus is done, place it on top of your slice(s) of cheese. Top the asparagus with a dollop of the grape yogurt you made earlier. Arrange the egg wedges across. Add a dash of pepper for color.

Serves: 4 or 2 large servings
